This week's Tasty Tuesday post is a little late. I apologize. I had some unexpected family matters come up that kept me away from Keen most of the day. Here is this week's belated post. I hope you enjoy this as much as my family does.
Garden Fresh Salsa
Ingredients:
3 large tomatoes, diced
1/2 sweet onion, diced
1 small rib of celery, cut fine
1 tbsp jalapeno chili, diced
1 bell pepper, diced
1 tsp fresh basil
1 tsp minced garlic
salt & black pepper to taste
Optional: cilantro to taste
In a bowl, mix together the above ingredients. Let mixture rest for a few minutes in the fridge. Serve chilled. This keeps in the fridge for two to three days. You can omit the salt for a low sodium version. The salsa is great for tacos or anything else that needs a little bit of a south-western kick.
