When cooking, it is important to wash and sanitize all of your utensils, especially when you handle meat such as chicken. No matter what a recipe says, always keep an eye on your food as it cooks, ensuring that nothing boils over or burns. Always be safe, take notes, and have fun!
Chicken Sauteed in Apple Juice w/Ginger
2 Chicken Breasts or equivalent of thighs
2 cups apple juice
1 TB Honey
1 TB chopped or grated Ginger(ginger powder can work too)
Salt and Pepper to Taste
1 TB Butter(optional)
Wash chicken and punch holes with fork all over. Pour juice, honey, ginger and salt/pepper to taste in medium sized pot. Stir til ingredients are dissolve and add chicken. Cover and simmer on medium heat, checking to make sure liquid does not boil over, for about 12 minutes.
Check for doneness and remove the chicken, setting aside on a covered plate. Now, reduce tthe remaining liquid to a syrup like consistency. Stirring continually and making sure to watch that it does not burn. This will take 2-3 minutes. You can add butter while you are stirring, or even a little cream or yogurt.
For extra flavor, add garlic. Spices such as cardamon seeds or herbs like thyme and rosemary would be very nice. You could add curry powder as well. You might even try substituting apple juice with pineapple juice and salt with soy sauce.
Serve over rice, pasta, ramen, quinoa, or whatever you wish. Carrots, onions, sweet potatoes, potatoes and spinach would go nicely along side this dish.
