Eat Healthy, Delicious Food without Breaking the Bank!

These recipes are approximate. I'm sorry but you will have to use a lil' common sense and experiment with portions and timing. But they are really simple to make, I think you will do fine! Very healthy and budget friendly. And tasty, of course.

Sweet Potatoes
- Bake or steam a bunch in advance. I like to keep the skin on because it is very healthy. Mash them and add honey, maple syrup or brown sugar, a little salt and maybe some butter or olive oil. Load them with sauteed onions, eggs, sausage or greens. Cut them into pieces and bake or fry them in a bit of oil to make sweet potato fries.

Bread-Got some bread that is getting stale? Have a loaf but tired of peanut butter sandwiches? Make bread pudding! Tear up your bread and throw it in a bowl. Mix in one beaten egg, brown or white sugar, cinnamon, butter and maybe a quarter cup of milk. Add dried fruit such as raisins, chopped nuts and diced apple or bananas if you want. Mix til goey, then put in a cake pan or loaf pan and bake on medium-low til golden brown on top. Eat alone or with ice cream!

Tear up bread and sprinkle cheese and butter on top, then bake on medium til cheese is melted. Serve with tomato sauce or chili.

Tear up bread and pour tomato soup over the bread in a bowl. Sprinkle cheese and add sour cream if you want. You can even add fajita/taco seasoning, curry powder or italian herbs!

Take bread slices and spread a little cream cheese, your choice of jam and a little chopped mint, serve as sandwiches with tea.

Take bread slices and spread a little cream cheese,add lunchmeat such as ham, turkey, bologna, salami or bacon, lettuce or spinach and some sliced apples or pears. Grill very lightly in a pan on low heat with butter, or serve cool.

Take bread slices and spread with butter, layer with cheddar cheese/swiss or american, bacon,sliced apples, green onions and a little honey or maple syrup. Grill very lightl in a pan on low heat with butter, or toast very lightly in the oven.

Mash avocado and mayo or sour cream. Add a little taco/fajita seasoning. Layer on bread slices with lettuce, sliced boiled egg, lunch meat bacon, tomato, green onion, cheddar cheese, etc. Serve as cool sandwich or lightly grill in pan on low with butter.

Mix canned chicken, tuna or salmon, mayo or sour cream, curry powder or taco seasoning. Spread over bread slices. Add your choice of cheese, lettuce, tomato, bacon, etc.

Make scrambled or sunny side up eggs. Spread a little mayo on toasted bread slices. Add eggs and your choice of cheese.

Slice hotdog into thin pieces. Spread mayo and honey mustard over bread slices, add your choice of cheese. Layer hotdogs onto bread. Add onions, lettuce, tomato, bacon, eggs etc. if you want. Serve as sandwich and eat.

Mash canned chickpeas, a little yogurt or sour cream, seasoning such as curry powder, mexican or italian herbs, salt and pepper to taste. Serve on toasts with lettuce, onion, tomato, make into sandwich. Mix chopped garlic, olive oil and balasamic vinegar in small bowl, dip sandwiches in.

Roast or sautee bell peppers, garlic cloves, sliced mushrooms and onions in a bit of olive oil, adding salt and pepper to taste. Crumbled italian sausage, ground beef, chicken,tuna, ham or bacon is optional. Mash together and serve in between bread slices with your choice of cheese, lettuce and a little mayo.

Slice peaches, apricots or straawberries(or all three) thin. Spread cream cheese on bread slices, spread a little bit of ceasar or ranch dressing(green goddess dressing can work too). Layer fresh raw spinach or lettuce, a little thinly sliced onion and your sliced fruits. You can add a bit of bacon, chicken breast, turkey breast or ham if you want. Serve as sandwich with a refreshing drink and maybe a summer soup.


Carrots- Sautee them in a little butter and oil with salt, garlic and black pepper. You can also add ginger, honey, maple syrup, sesame oil, or soy sauce.(A little goes a long way, add slowly til you get the right flavor). Then serve them over mashed potatoes, meat or throw them in the blender with a bit of broth or milk to make a soup!  Garnish with herbs such as mint, basil, oregano, thyme.

Meat- For tougher or less expensive pieces of meat, poke holes in the meat and rub with garlic, onion, salt or soy sauce, a bit of sugar or honey and your choice of spices. Put it all in a bowl and cover for a few hours or overnight.

Keep any meat bones or fish bones/shrimp shells you have to make stock. It's very simple. Just throw them in a pot of water with onion, garlic, carrots, celery, etc. Add salt and spices to taste. Simmer for a few hours, let cool and strain broth into freezable tupperware. You can keep this stock in the freezer for many months.

Pork shoulder(or pork butt, same thing!) and pork leg are inexpensive but delicious cuts of meat. However, they can taste gamey and be a bit touch, so punch holes with a fork and marinate them in a bit of oil, salt or soy sauce, garlic, onion and your choice of spices for a few hours or, even better, overnight. I like to add orange juice, pineapple, soy sauce, ginger and honey. Or I will just add lots of rosemary, garlic, salt, sugar and oil for something more simple.

You can even marinate in maple syrup, sour cream or yogurt, oil, salt onion, garlic and curry powder. Fajita/taco seasoning, oil, salt, garlic, onions and lime juice is great too. Just make sure you get the garlic, onions, salt, oil and sugar in their because they take away the gaminess.This ensures the meat is soft and the gaminess is taken away. Then slow cook in a crock pot or bake in the oven. You can also simmer the pork in vegetable broth in a stockpot til tender. Make sure to keep the broth!

The marinades listed above also work for budget meats such as chicken wings, thighs and drumsticks, chuck steak or stew beef and fish. You could even try them with tofu or fake meat. Serve everything over brown rice, mashed potatoes, mashed sweet potatos or whole wheat pasta! Chop the meat up and serve on sandwiches, in tortillas, in casseroles, soups, you name it.

Chicken Thighs- The less expensive but much tastier and nutritious part of the chicken! Just remove the skin if you want for less fat. I like to throw chicken thighs in a rice cooker or pot with soy sauce, honey, ginger, sesame oil, garlic, onions and maybe a teaspoon of curry powder! Add cream, sour cream or cream cheese with a bit of butter. Let thighs cook on medium-low til they are firm, check for doneness and serve over rice, pasta, quinoa or a baked potato! Serve with some sauteed veggies!

You can also bake, fry or steam chicken thighs! They are so delicious and good for you. Roll them in a little mayo or oil, then roll them in panko or breadcrumbs with a bit or salt and your choice of seasoning(I love cajun seasoning), then bake on medium heat until they are cooked thru.

Kale- Sautee kale with garlic, olive oil, butter, onions and a bit of salt and pepper. I like to add a little cream and maybe a tablespoon of beer or white wine too. Cook til the kale is tender but still bright green!


Pork Chops- Marinate pork chops in garlic,chopped onions, soy sauce, a bit of sugar or honey, orange juice and ginger. You can just marinate in garlic, onions, salt and italian herbs if you want something more simple. Marinate for a few hours if you can, then sautee in medium low in a pan with a little oil, or bake in the oven. Delicious with kale, rice, potatoes, sweet potatoes, salad, pasta!

Cut pork chops in strips. Rub with olive oil, rosemary,garlic powder. Wrap bacon around strips, bake on medium in the oven or until done. You can also rub with curry powder, italian herbs,mexican seasons, cajun seasonings, etc.

Refried Bean Soup- Mix refried beans with chicken/beef/veggies stock or milk and still til smooth like soup. Add a few chopped cloves of garlic, onion and maybe a little curry powder or fajita/taco seasoning. You can also add chopped veggies, chicken, ground beef, pork, etc. Salt very slowly to taste, stirring after you add a little salt and checking to see if it is to your taste(you don't want to put too much salt, especially if you added broth, which has salt). Cook on medium low, stirring occasionally. When everything is cooked thru, serve over rice or even mashed potatoes! Sprinkle a little cheese and even sour green with chopped green onions if you want.

Bananas-Bake chopped bananas with cinnamon, honey or sugar and a little butter. Add chopped nuts, raisins and sour cream if you want. You can even soak pieces of bread in cream and layer the bananas over the bread, the cover and bake til the bananas are cook thru. You can pour the baked bananas over icecream.

Make banana smoothies with yogurt or banana shakes with milk and ice cream. While blending, you can add maple syrup, cinnamon, peanut butter, pineapple, cherries, peaches, strawberries, oranges, etc. Serve with whipped cream on top or just as is!

Make banana bread(very easy, look on the internet for a recipe), make banana cream pie by blending bananas and cool whip, then serving over graham cracker crust. Dice bananas and sauttee them in butter, olive oil, garlic, salt, pepper and onions as a unique sidedish. Dip bananas in melted chocolate or cake icing with sprinkles, then put in a bag and freeze. When frozen, eat like a popsicle!

Potatoes-Mash them, bake them, slice them up and bake or fry them. Substitue pie crust from mashed potatoes, then pour your filling over and smooth more mashed potatoes on top, then bake.

Make potato croquettes by mixing mashed potatoes, a little ground beef or sausage or veggies, 1 beaten egg, salt, pepper, garlic, chopped onions. Mix, then roll in bread crumbs, form into burger shaped patties and lightly fry or bake. I like to eat them with a little sour cream, ranch or butter.

Eggs-Make an egg pie by getting out your rice cooker or a non stick-medium sized pot. Rub the bottom and sides of the pot with butter. Beat 6 six eggs, add shredded cheese, sour cream, crumbled sausage/chicken/pork/ground beef/bacon/ham/tuna/salmon(any of those) or chopped veggies, a cup of thawed out hashbrowns, a teaspoon of salt, pepper, garlic, chopped onion, some italian herbs or curry powder or taco/fajita seasoning and mix well together till the eggs are yellow. Then just pour in your pot, put the lid on and cook on medium low. Flip the egg pie when it is firm on the bottom, after a few minutes stick a knife in to check if cooked thru. Dump the pie out on a plate. You can throw more cheese, sour cream, green onions, hot sauce or whatever else you want on it

Pasta-Toss pasta with sautteed garlic or garlic powder, Italian herbs, butter and olive oil. You can add sour cream, bacon, chicken, pork, ground beef, tuna, steak, salmon, veggies such a broccoli, squash or tomatoes, whatver.

Toss pasta with mayo, fajita/taco seasoning, sauteed garlic or garlic powder and toss with a bit of ham or bacon. Serve chilled.

Toss pasta with soy sauce, honey or sugar, ginger, oranges, sesame oil and steamed broccoli or chopped veggies. You can add butter and/or sour cream or plain cream for extra flavor.

Sauttee garlic, chopped tomatoes, garlic, italian herbs and tuna or other meat in butter and olive oil. Toss with pasta and serve. Add cream and parmesan if you want.

Mix cooked pasta with tomato sauce, 1 beaten egg and ricotta cheese, then put in casserole dish. Layer top with your favorite cheeses, put lid on and bake on medium til bubbling. You can subsitute tomato sauce for alfredo, pesto or even chili! Add ground beef/bacon/tuna/chicken/crumbled tofu/veggies(any of these)if you want. I like to add butter and olive oil when I serve.

Chop up pasta and combine with 1 beaten egg, sugar or honey or maple syrup, a pinch of salt, cinnamon, cream or cool whip,butter and graham cracker crumbs(add apples, nuts, raisins, pineapple, cherries, coconut flakes, even chocolate if you want!). Put in a casserole dish and bake on medium til everything is solid. Serve warm with ice cream!

Non Alcoholic Drinks- Combine vanilla ice cream or your choice of flavor, a few maraschino cherries, 1 chopped banana, coconut flakes, 1 cup pineapple and half cup or more of milk(you can be bad and add cream if you want). Add mint, chocolate chips, nuts if you want. Serve in glasses with whipped cream and your choice of syrup, or just as is!

Mix a few cups coffee(make sure it is cooled), 1 scoop vanilla or chocolate ice cream, cinnamon, sugar, cocoa powder in blender til smooth. Chocolate chips and mint are optional. Mix in blender and serve with whipped cream, chocolate syrup or just as is.

Sauttee apples on low in butter, sugar and cinnamon, stirring til apples are soft. (You don't have to cook the apples, but I reccomend it. Also you can substitute canned apple pie filling, cherry pie filling, key lime pie filling, peach pie filling, drained pears, drained fruit cocktail if you want)Remove and cool. Put vanilla ice cream, apples in blender. (For a kick you can add ginger, mint, cardamom, nutmeg or butterscotch syrup)blender til smooth, serve in glass with whipped cream or as is. You can also pour this mix over a premade graham cracker crust, layer the top with cool whip, cover and freeze.

Mix cool whip or ice cream by hand(chocolate for extra flavor) with crushed oreos, ginger snaps, graham crackers, fig newtons, chopped up candy bars, marshmallows, gummie candies, your favorite sugary cereal such a fruity pebbles, trix or coco puffs, fresh fruit, fruit cocktail, whatever you want. Pour in bowl or glass immediately and eat with a spoon.

Mix your choice of jam/jelly such as strawberry, orange marmalade, apple butter, lemon butter, apricot, peach, pineapple, cherry blueberry etc. in a glass with tablespoon of water til the jam is liquidy. Then slowly add seltzer water or sprite/seven up and stir. Add mint and whipped cream if you want. Drink up!

Combine diced chilled watermelon with chilled coconut milk and sugar in blender and blend til smooth. You can add ginger, cardamom, basil or mint(all of these work well together, but you don't have to include them all). Serve in glass with whipped cream or as is.

Add juice of whole lime, sugar to taste, maraschino cherries and coconut milk in blender and blender til smooth. Serve over ice or add to iced tea.

Throw yogurt, orange juice or pineapple juice and your choice of fruit in a blender. Add mint or other flavorings if you want. Blend until smooth(you want the consistency to be like a smoothie, so add more orange juice if it is too thick) and serve over ice

Heat 3 cups apple juice or apple cider in a pan with brown sugar, 1/2 teaspoon lemon zest, 2 TB honey, 1 teaspoon cinnamon and 1 teaspoon cardamom(if you can't get cardamom that is ok. Stir and bring to a simmer, then cool in refridgerator. Put in blender with 1 cup milk, cream or yogurt and blend. Mint and whipped cream is optional.

Blend yogurt and frozen fruit or jam in a blender. Serve in glass with crumbled graham cracker on top.

Blend yogurt or sour cream, maple syrup and ginger in blender. Serve in glass with crumbled ginger snaps or graham cracker crumbles on top and whipped cream if you want.

Heat candies such as skittles, jellies beans, jolly ranchers, root bear candies or anything like that in a saucepan with a bit of sugar water or orange juice. Stir on low til the candies dissolve. Make sure the candy doesn't burn or get to hard, you want to have enough liquid to make the candy like a syrup consistency. Cool and pour into selzter water, in shakes, over ice cream or any crazy concoction you desire!
